Okay, this is just a fun poll . . . My fiance sez you don't put onions in chili . . . I say yes you do . . . . Who likes or puts onions in chili?

Very thin sliced onions sound good. With or without both sound good really, I love chili,especially with cheese and sometimes fritos.

Chili should absolutely have onions. I don't care for big chunks and prefer them chopped to the verge of elemental dust (or maybe just 0.125" cubes). :-)

Onions cooked in the chili and raw onions on top! And a high meat to bean ratio. Can't top my wife's moose green chili IMO.

My beloved dad's recipe (he used to cook for the fire department when we lived in Illinois):

1 lb ground beef
1 lb. ground sausage (I'm a Jimmy Dean fan)
3 cans chili beans (Kuner's are the best but they don't sell them here :-()
1 bigggg can tomato juice (64 oz.?)
3 tablespoons chili powder
1 bean can full of water

and of course

1/2 onion, finely chopped (or 1 TBSP dried chopped onion)

Brown the meat, add everything else, stir it up, and bring it to a boil. Reduce the heat and let it simmer for as long as possible (4-6 hours is best).

Now I'm hungry dang it.

Since Leanna published her recipe for chili I thought I'd do the same. This concoction makes 3 gallons once its been cooked down for 12 hrs.
2 large cans tomatoe juice, 3lbs browned lean hamburger, 3 cans sliced large tomatoes with their juice, 2 liters of medium salsa, 3 cans green beans, 3 cans pork and beans, 3 cans kidney beans all with their juice, 1 can corn, 1 can peas, 24 medium sliced mushrooms, 2 sliced peppers, 12 diced green onions, 3 tablespoons chili powder, 1 TBS pepper.

Bring to boil and then simmer for 12 hrs. I use a 4 gallon SS crock.

MM Good.

Sounds more like an alphabet soup mistake or some sort of misguided stew...

Chili is... meat, beans (as many kinds as you like, except the green ones) tomatoes, garlic, onions, and the a secret blend of spices, that is Chili!!! So to answer the original question, YES, onions do go in chili finely chopped so you don't know that they are there, and apparently they also go in what ever Terry is making too.

Terry, Chili called and he asked that you stop using it's name for the stuff that you are making.:-D

Totally Agree !!! I like adding some extra chopped onions and jalepenos a half hour before serving to give it more texture .. Yummm, believe it or not, I'm making some right now, and it s/b done in about an hour ...

Always,Always,Always, At least one big onion per pot! One sweet and one regular,sauteed at the bottom of the pan until they turn clear with just a little brown on the edges to bring out the natural sugar,then,add the rest of the stuff!

Onions yes, a beer yes, beans NO. My favorite chili recipe is based on Carroll Shelby's Texas Chili recipe but instead of regular chili powder I use a 50/50 mix of dried cayenne power and dried habanero powder (both from peppers I grow myself) and about 1 hour before it is finished simmering I add a whole jar of diced, pickled jalapenos (which I also grew and pickled myself). I also use a mix of 90% lean ground beef and ½ inch cubed top sirlion. The result is a pot of flaming thermonuclear death that tastes amazing. I love firey foods. It is almost self-cooking.

Mexicans may put beans in their chili but Americans, or more correctly, Texans, don't. That's what I always tell my wife. She uses beans, I don't. Although hers is nowhere near as firey as mine it is still good so make it any way you want.

Had a long standing argument with a couple of nieces about the meaning of chili con carne. Yep, after 15 years, I won. LOL They thought that it was without meat...little smart asses thought that con meant "no" carne "meat". Actually means with meat. Peppers and meat, there is the basics.

And I like onions in almost everything!...how can you eat a waffle burger without onions?

I was just wondering because I've never heard of "ramps" used in cooking. LOL. I live in the South so the only thing that would come close is what Sport said "wild onions". You don't live to far from me do you think it is the same thing? I know the Indians use to eat them from what I have been told. You know the Indians that go "Woo Woo Woo Woo!" not the ones at your local convenience store. LOL

The notes are from an inexperienced Chili taster named Frank, who was visiting Texas from the East Coast:

Frank: "Recently, I was honored to be selected as a judge at a chili cook-off.

The Judge #3 called in sick at the last moment and I happened to be standing there at the judge's table asking for directions to the Budweiser truck, when the call came in. I was assured by the other two judges (Native Texans) that the chili wouldn't be all that spicy and, besides, they told me I could have free beer during the tasting, so I accepted".

Here are the scorecards from the event:

Chili # 1 Mike's Maniac Mobster Monster Chili

Judge # 1 -- A little too heavy on the tomato. Amusing kick.

Judge # 2 -- Nice, smooth tomato flavor. Very mild.

Judge # 3 -- (Frank) Holy shit, what the hell is this stuff? You could remove dried paint from your driveway. Took me two beers to put the flames out. I hope that's the worst one. These Texans are crazy.


Chili # 2 Arthur's Afterburner Chili


Judge # 1 -- Smoky, with a hint of pork. Slight jalapeno tang.

Judge # 2 -- Exciting BBQ flavor, needs more peppers to be taken seriously.

Judge # 3 -- Keep this out of the reach of children. I'm not sure what I'm supposed to taste besides pain. I had to wave off two people who wanted to give me the Heimlich maneuver. They had to rush in more beer when they saw the look on my face.


Chili # 3 Fred's Famous Burn Down the Barn Chili


Judge # 1 -- Excellent firehouse chili. Great kick. Needs more beans.

Judge # 2 -- A bean less chili, a bit salty, good use of peppers.

Judge # 3 -- Call the EPA. I've located a uranium spill. My nose feels like I have been snorting Drano. Everyone knows the routine by now. Get me more beer before I ignite. Barmaid pounded me on the back, now my backbone is in the front part of my chest. I'm getting shit-faced from all of the beer.


Chili # 4 Bubba's Black Magic


Judge # 1 -- Black bean chili with almost no spice. Disappointing.

Judge # 2 -- Hint of lime in the black beans. Good side dish for fish or other mild foods, not much of a chili.

Judge # 3 -- I felt something scraping across my tongue, but was unable to taste it. Is it possible to burn out taste buds? Sally, the barmaid, was standing behind me with fresh refills. That 300-LB. bitch is starting to look HOT . . . just like this nuclear waste I'm eating! Is chili an aphrodisiac?


Chili # 5 Linda's Legal Lip Remover


Judge # 1 -- Meaty, strong chili. Cayenne peppers freshly ground, adding considerable kick. Very impressive.

Judge # 2 -- Chili using shredded beef, could use more tomato. Must admit the cayenne peppers make a strong statement.

Judge # 3 -- My ears are ringing, sweat is pouring off my forehead and I can no longer focus my eyes. I farted and four people behind me needed paramedics. The contestant seemed offended when I told her that her chili had given me brain damage. Sally saved my tongue from bleeding by pouring beer directly on it from the pitcher. I wonder if I'm burning my lips off. It really pisses me off that the other judges asked me to stop screaming. Screw those rednecks!


Chili # 6 Vera's Very Vegetarian Variety


Judge # 1 -- Thin yet bold vegetarian variety chili. Good balance of spices and peppers.

Judge # 2 -- The best yet. Aggressive use of peppers, onions, and garlic. Superb.

Judge #3-- I shit myself when I farted and I'm worried it will eat through the chair. No one seems inclined to stand behind me except that slut Sally. She must be kinkier than I thought. Can't feel my lips anymore. I need to wipe my ass with a snow cone.


Chili # 7 Susan's Screaming Sensation Chili


Judge # 1 -- A mediocre chili with too much reliance on canned peppers.

Judge # 2 -- Ho hum, tastes as if the chef literally threw in a can of chili peppers at the last moment. I should take note that I am worried about Judge #3. He appears to be in a bit of distress as he is cursing uncontrollably.

Judge # 3 -- You could put a grenade in my mouth, pull the pin, and I wouldn't feel a thing. I've lost sight in one eye, and the world sounds like it is made of rushing water. My shirt is covered with chili, which slid unnoticed out of my mouth. My pants are full of lava like poop to match my shirt. At least during the autopsy, they'll know what killed me. I've decided to stop breathing, it's too painful. Screw it; I'm not getting any oxygen anyway. If I need air, I'll just suck it in through the 4-inch hole in my stomach.


Chili # 8 Tommy's Toe-Nail Curling Chili


Judge # 1 -- The perfect ending, this is a nice blend chili. Not too bold but spicy enough to declare its existence.

Judge # 2 -- This final entry is a good, balanced chili. Neither mild nor hot. Sorry to see that most of it was lost when Judge # 3 passed out, fell over and pulled the chili pot down on top of himself. Not sure if he's going to make it. Poor dude, wonder how he'd have reacted to really hot chili?

Here's what a ramp looks like. They are nothing like a wild onion. There is usually about an inch of the plant poking out of the snow when they are prime for eating. Richwood, WV has the most famous ramp festival. Check out the website.

older crowd would have potato-leek suppers at the grange hall, etc.

Actually, I always thought onions should go on top of the chili along with shredded cheese as a garnish. Real chili doesn't have beans! However I do like chili WITH beans! Used to judge a lot of chili cookoffs back when I was working in radio. Really a lot of fun but there were some real characters there! LOL Mike

Very finely chopped red onion, browned in olive oil right before browning beef that has been soaking in beer and spices. I use lean ground beef and stew meat. Pinto beans not kidney or green beans. I also add corn.


I have only entered in one chili cook off and won two awards: Best in Show and Hottest.

I dont like onions,but the have to go in my chili! I chop up the onion pretty fine,then grill them in a little hamburger fat(leftover from browning the meat) and a little garlic! Dont forget the longer you cook chili,the better it is=P~

Cheese Coney--Same with cheese and it can be had with or without onions.

I took some to work one day and a co-worker came in late and instead of waiting for more hot dogs to cook, he ate 1/2 a can straight. 10 minutes later, I could not understand him when he complained that his lips were numb.

I love the smell and taste of cooked onions but my stomach bitterly complains.

Have to say yes to the onions. Big chunks & lots of them. Also lots of dark red kidney beans. What amazes me is that none of the recipes I've seen on here have any cumin in them. No cumin?!?!? It's the secret ingredient that makes it chili. LOTS of ground cumin & BUNCHES of cumin seed! Love to bite into those seeds for a burst of flavor.

I agree, Onions make just about everything better. Same goes for Garlic.

Heck put the 2 together. One of my favorite things to make on the grill. Take an onion, peel it, wrap in in foil with a bunch of garlic and butter and cook it till its soft and falls apart.

Growing up, my mother would cook sauerkraut (?sp) and it stunk up the entire house. Gross, never could get past the smell to acquire a taste for that stuff. We also had dumplings, a large pork sausage (like a kilbasa), breaded veal, a beef and noodle dish, onion soup, and on the other side, a ton of Italian food. :love7:

Here is the Chili recipe I got from a friend .Its really good stuf and easy to make see how it compares to yours.1 1/2- 1 3/4lb ground chop meat.Brown meat in pot on medium. While its cooking add 1 1/2 heaping TBS of chili powder,1/2TBS Cayenne (red Pepper) , 1 teaspoon ground black pepper, + 1/4teaspoon salt.

Add 1 medium white onion chopped to meat after meat browns for 5 min.
Once meat is fully browned, add 1 lg CAN 28oz plum tomatoes, Seasoni brand if possible,1/2cup ketchup. Let simmer for 1 1/2 hours stirring once in a while.Serve with Tostitos ( scoops) corn chips . Enjoy :)

o.k. 1/2 vadalia onion chopped, 1 clove garlic, 2 chili peppers chopped and a half habanaro pepper sliced thin. put that in the frying pan with a stick of butter. brown it nice then add your chopped meat and brown. do this before adding to the tomato paste, water, beans (undrained), 1 16 oz michelob, chili powder, pepper, more chili peppers and chopped onions and to taste very slowly habanaro. this will give you a great spicy bite but not over power the taste. slow cook is the only way. 6-8 hours.

I use onions in the chili I make at the restaurant but for the most part she is correct. Most of the big TV chef's do not use onions in chili.....sorry dude.

1. Onions Yes!
2. Beans No! (When I cook Beans, I cook Beans...)
3. Mushrooms ??? Don't even ask about that...
4. Serrano Peppers taste better than Jalapeno's
5. Use ghost peppers if you plan on making nuclear waste....

MUST also have elbow macaroni

Real Texans even put onions on their Fruit Loops in the morning. There used to be a brand in the stores called "Bushes" that was in a glass jar and that stuff was goooooood but needed to be doctored up a bit if you want HOT.

Chili sounds good right now.

My recipe:

1 Large Can of Bush's Chili Beans in Mild sauce
2 lbs of ground beef (brown it with chili powder, pepper, onion powder, garlic powder and strain the grease)
1 Large can of Dark Red Kidney Beans
1 Large can of chopped tomatoes
1 Large can of tomato sauce
1 whole stick of Butter
1 small finely chopped onion
1 small can of black beans
1 bag of Bird's Eye White and Golden Baby Corn

Simmer for about 2 hours and season according to taste.
Top with Mild Cheddar and sour cream.

It's amazing.

I put them in right before I eat it, fresh diced red onions with some cheddar cheese, makes all the difference.
