Mulholland!!! Even Jay Leno drives like a beast on Mulholland. :D
But seriously, you have to drive the Mulholland highway. Spectacular views, great corners, and it's pretty well known that everyone goes out there to flog their cars through the corners. Best NOT to go on the weekends. During the week traffic is much lighter and encounters with knee-dragging motorcyclists are fewer.
And it will dump you out in Malibu, which has spectacular canyon roads to drive twisties. Topanga Canyon, Kanan-Dume, Piuma, Las Flores Canyon, they're all crazy. Best is Tuna Canyon though, especially the lower, one way only section that dumps back to the PCH. I'd run up the PCH in my '56 Austin Healey 100 from UCLA, then hit Las Flores to Schueren Rd, to Saddle Peak, and then drop back down Tuna Canyon. Have your brakes in good shape for that one.
