Put the engine in the car with the intake and the carb with a paper gasket, and your air cleaner and then measure the clearance using a wad of putty, then figure out what will fit under the carb. None of this stuff is precision built to start with and your car and K-frame are now 50+ years old...

Why chance it? I put thread sealant on all those engine front bolts - it can't hurt anything...

I think that you stretched the bolts. I'd get rid of them and use better bolts (as per MoparLeo above). Be careful using torque specs for a cast iron manifold on an aluminum piece.... I think the directions from DionR are right on the money. I use thread sealer instead of oil on the threads...
