Broke Flex Plate, Full Fluid Change, # of Bolts?

I broke the flex plate between a 360 and a 1982 727. I'm not sure how many bolts mount it to order the flex plate and I don't know how many quarts of fluid to buy to replace all the fluid.

The guy at the parts store told me that the Dextron 6 I have in there now is not compatible with the Dextron they sell now. I put the Dextron 6 in over 10 years ago. So that makes sense. I do have a trans cooler so add a couple, at least, for that.

Also it is a 10 or 11" plate?

Called Summit, they have a universal flex plate, and I believe it should take about 14 quarts give or take.
