Because I have 15 inch cragars on the rear of my 71 Demon if I get a flat tyre how will it effect the diff if I use the standard 14 steel spare to get me out of trouble with the 15 inch rim on one side compare to the stock 14 inch skinny stock steel rim on the other?

no different than driving in a big circle...
 
Get a 15" safety spare out of a Cherokee, it fits in the spare tire well.
 
Or out of a ford crown vic IF you are using large bolt pattern
I needed a spare tire for my cuda. Went to the junk yard and found one of those temporary spares out of crown vic. It has the same 28" diameter as the 275/60/15 I'm running on the rear.

Mid 90's to 02 I believe.... they were 15' 5x4.5 BC .. that's what I use as my spares ...
