Are you doing a ground up resto?
Did you have the car painted and detailed on the bottom as a ROLLER with the Drive Train out on a Roller Jig??

I am about to do the same thing to my 67 and need to come up with a plan on how to get it done.

This was my first Mopar build/car. It was actually done(sort of) but I was never happy with the black engine bay. So I just recently took the motor out and painted the engine bay. I also just finished building the slant motor for it,but am kind of on the fence with a V8 conversion.

I have never had a car on a rotiseree,usually I will strip the car down,pressure wash the underside,and undercoat it while the car is on jackstands.Then you can put the front end together and then the back.
Which ever order you deside.

I will never install a motor from the top of a Mopar again.All assembly will be done from underneath. It works slick as a whistle,without as much as a scratch.

Not knowing how far you are going with your car,here is the order I would go.
1. Pull motor,trans pressure wash it.
2. Paint or undercoat underneath the car.
3. Remove interior. (If you are worried about overspray).
4.Roll the car to the painter.
5.While car is being painted,detail k-frame,front brakes,suspension,motor,trans. Have it ready to bolt in when you get the car back.
6.Get car back,either install motor/trans,or tackle the rear end.
