Holley 750 Double Pumper Vacuum vs Mechanical

Hi everyone, just to get some insight on a Holley 750 Double pumper with vacuum secondaries vs one with mechanical secondaries. Would the vacuum setup be more of a street car and the mechanical a street/strip car. What application would you choose one over the other for. Besides the mechanical being hard on gas what is the pros and cons between the two. Sorry I lack carburetor knowledge.
