Inner bearing questions

Do some of the inner bearing seals have a rubber seal with metal lip? When I took off my hubs, I found a raised lip on one side that was rubber and came out easily with the seal, but on the other side the raised lip was metal and I pried (or perhaps tore) just an inner rubber cylinder out when I took out the seal. I'll be replacing the seals, as I tore the passenger's side and the driver's side was so worn that I got the bearing out before the seal. Just want to know what all I need to remove before I can put in the new bearings/seals.

Semi-related question: How should I go about inspecting the spindle/bearing/race to see if I can reuse the bearings?
