Need to choose a cam
you should definely go with an adjustable rocker set. i got one out of a junkyard back 20 years ago for my '68 dart. it came off an old smashed up cuda with a 273 in it. then you can run a solid lifter cam. hydraulic cams start floating the valves or pumping up / locking at full height over 5k rpms which is not a good thing.
if money is not too tight you can get a set of the hughes engines rocker set for $497 which has great oiling. the stamped factory rockers + hydralic cams i would say is only if it is a budget build. a solid lifter camshaft is a stronger build, but just means you need to adjust the valves every 10k miles or so.
also if they have the engine apart make sure you get a high volume oil pump. i had one and my 340 never had a problem. i also had a milodon low prof 6quart oil pan. this way, your engine never experiences oil starvation. better oiling will mean less wear on the main rod and cam bearing surfaces. i'm assuming they will put a quality oil pump on with the stroker kit.
