What to do?

All I was looking for was a nice A- Body cruiser to take to car shows and one I can take the wife around in. She likes car shows, her and I try to make it to Mopar Nationals almost every year. I shouldn't have even gone to look at it, Plum Crazy 1971 Plymouth Duster, "Built 340, Ported J heads,Edelbrock Torker Jr. intake, 540 lift cam, turbo action 8" torque converter, 8.75 rear with 3:91 gears etc... I made the point that the engine was built a bit much for what I wanted it for, but after the owner dropped the price down a ridiculous amount and offered to throw in the original front seat I was hooked!
Now the dilema, I really want to get this Duster to the point that I can cruise comfortably, have a bit of power when I need it but not wake the dead doing it. I know I'm going to catch alot of flack! "Why would you want to change anyting?" It's a point of driving it comfortably.
I already have the plan to take the exhaust out the back instead of ending at the doors with it. and I know that would do it some good.
I was told to possibly get a slightly smaller cam, and change to a dual plane intake. Anyone else have any more ideas?
