I really like the white interior and you don't often see that, especially in that nice of shape. Personally, I wouldn't dye those nice white panels and back seat. I'd just use whatever black seats in it for now and eventually you'll run across some nice white seats to use in it. It's funny how that always happens. I'll want or need something, and not even really look, and it just turns up soon enough somehow. The white interior will be a lot cooler in the summer sun also. It's your car, but just really think about what you're doing there before you jump on the dye and regret it later.
Anyway, looks like a GREAT car. You're so close to being done. Just having that nice paint already done, you're most of the way to a really great ride.
