gimme your best mac n cheese recipes

Okay Dave and Ken, sorry to keep your mouths watering all day but it's been a busy one. Please let me know if this goes over as well at your house as it does at mine! :-D

Macaroni and Cheese

1/2 cup macaroni
1 cup Velveeta Cheese (1/4 of a brick or so to taste)
White Sauce (recipe follows)

Preheat oven to 400 degrees.

Boil macaroni til tender. Drain and set aside.

Chop the Velveeta into little bricks so it'll melt faster; alternatively, you can try grating it if you're into frustration and sticky cheese fingers.

Add Velveeta to prepared White Sauce over low heat, stirring occasionally until the cheese is fully melted. Add cooked macaroni and stir gently until well blended. Place the mixture in a well-buttered 2 quart casserole dish. Dot the top with a few little chunks of Velveeta. Bake uncovered for 15 mins or til lightly browned.


White Sauce

2 tablespoons butter or margarine
2 tablespoons flour
1/8 teaspoon pepper
1/4 teaspoon salt
1 cup milk

Melt butter in a large saucepan over medium heat. Add flour, stirring constantly til smooth. Add milk gradually and allow it to cook until the mixture starts to get thick. Add salt and pepper. If it's lumpy, stir it vigorously with a whisk til smooth.
