my 340 is currently experiencing an overcooling problem. the block and heads was media blasted and has a heavy duty water pump, a new radiator, 185 degree thermostat, and a fixed 18" blade fan plus shroud. would a thermostatic fan clutch help my car heat up to operational temp faster without having to load the transmission to heat the motor? I am running at 140 degrees on an average 70ish degree day and about 150 degrees on a 95 degree day with no traffic traveling at 50mph
 
If you have a properly fuctioning 185 thermostat, the temp should be 185 minimum.
As younggun said, verify the temp with a known good gauge and sender or better yet an infrared sensor.
 
Maybe your t-stat is stuck open it should climb and hold to around 185 give or take 10 degrees.
 
Your thermostat must be screwed up if your temperature is accurate. Unless your temp probe is in the bottom of the radiator.
I agree with YoungGun. First be sure your readings are right. Second, where is your temp probe mounted? Should be in the intake near water outlet. Third take your thermostat out and get a cooking thermometer and a pot of water and test the thermostat opening temp. It should open starting 10 degrees or so below its rating and be all the way open by 10 degrees after its rating.

After that, put a thermostatic clutch fan in so you can get 10 - 15 horse power back.
 
Some of the new thermostats are supposed to be "fail-safe", meaning that when they fail they stick open. If you have a t-stat like this maybe you have installed it incorrectly (upside down). It should be pointing "up".
