start up went good but

So I just finished the cam break in and the first start up of my rebuilt engine. Everything went good, no leaks no funny noises from what I could tell over the engine idled up. Which is where the problem is. The engine fired right up but screamed, I had to jump out and work the choke to get it to idle between 2500 3000 1500 for about a half an hr. I had a timing light hooked up to it but couldn't get it to stay where I wanted it but it wasn't jumping around so it's 32 degrees at 2500 It was kinda hard keeping it at the rpms for the cam break in and holding a timing light and trying to turn the distributor all at once. I torqued the intake and used all new gaskets for everything could this be a vacuum leak? all new hoses as well.
The carbs a 680 quick fuel vacuum secondary electric choke, could my choke be stuck? The carb hasn't seen many miles at all. I had an old car back in the 80's that would scream when u first started it up but idled down after it warmed up a bit. I have to get the timing set but with it wanting to wind up I need to figure out whats up before I start it again. I'm letting it cool down a bit and I'm going in the garage to drain the oil and look around a bit.
