I'm also in agreement, id go for the 273 build, these little 273's are fast revving, and surprise many, as to how high you can take the rpms before float occurs, and how quick they can pick up and move when dialed In right.

I love some of the stories my dad tells me about my dart when he used to drive it daily out to thiokol. One of my favorites is the 442 that was messing (one of his co workers) with him on the old highway out to work for about 10 miles, and he got tired of it, dropped it from fourth to second and romped on it, breaking tires loose in second, third and then fourth gear. At any rate, my point is, yes u can build more horses in a 340/360 setup, but, the little LA can be as fun. If u have the parts and want, I'd say go for it.
