What parts do i need for 727 rebuild

The trans will not have trans brake.95% street may put slicks on it and go to local track.It will be occasionally driven hard on street.If i have it rebuilt i want to make sure the shop does'nt leave old parts in saying they should take 580 lbs of torque.What should i make sure they change and what stock components can be reused like servos
