9" vs. 8.75" Hmm....not that big difference.
But maybe you have some another reasons why use another style pan:
-Price
-In this situation, Canton is a bit smaller, but 7qt. of oil is enough up to 8000rpm. (At least)
-Maybe you have a nice painted/powdercoated k-frame and you dont want to cut it.
-You need header clearance, (for example: 1 7/8"hooker headers hits to the milodon 30935 pan, mine did).
IMO, 10" Moroso is too deep.
Charlies makes great pans. And price is reasonable and you get what ever you want.
