Fairgrounds diner is just outside Gate 1. Good after hours meal. Have eaten there in the evenings a couple of times.
Sunrise Concession by Barbie Blvd. and row ND is good for a "big Breakfast". I think the Boy Scouts typically run it.
The food court is good by the grandstands.
There is the Parts hauling service and an on site taxi
