Looking for opinions on oil viscosity on Gen 3 Hemis and maybe people's experience. I am currently putting a 2012 Ram 5.7 together and stock it required 5w20 and since I will not be running mds and may not be vvt I was wondering if I could use a 10 w 30 or 5w30 full synthetic. I always used Mobile 1 or Valvolin Vr1 . Also I was wanting to know if a Zink additive would be useful in a roller cam engine.

5W20 or 5W30 would be fine. No zinc required for roller lifters. You could run zinc on break in, after that run synthetic. 65'

I like Mobil 1 and use it in 2 of my 3 late model hemis. My 2005 5.7 gets 5w-20 and the 2006 6.1 gets 0w-40. They both have over 100k miles on them and run like new.

Even without MDS or VVT I would probably err on the side of caution and try to use as close to the stock weight as you can. The whole engine was likely designed with certain tolerances and whatnot around that oil, so it would make sense to stay close. Granted I think most owners manuals will suggest different weights for different climates, so I'm guessing there's a bit of swing in there.

This is not true. Roller cam engines do require zinc, just "not as much" as a flat tappet engine.

Mobil 1 0w-40 had a decent zddp content a few years back and was listed as the factory fill on both my 6.1 and 392 SRT’s. Not sure if they have dialed it back in the last few years.

just got this in the mail today,,if the upload works it might answer your ?
Good article, makes sense about the quality of oil and volatility of thinner oils especially with today's low tension rings witch seem to coke up. I was thinking that going from a 5-20 to 5-30 Would not that much of a change. The thought of 0-16 or 0-8 is pretty scary.

0-30 Amsoil Signature Synthetic in both my 5.7 Hemis. One vvt, one not. Nice additive package to massage seals. 0 gives good start up protection, and 20 is too thin for any climate.
Both purr. Extended drain too after first change. 06 Daytona and 09 Challenger 6 speed.

If your putting a stock motor back to stock, all you need the the manufacturer recommended oil. You won't get better protection running thicker oil, you'll just give up power.
Adding Zinc additives isn't necessary either as those are for older designs using modern oils.
Manufacturing tolerances are so much better than it used to be which allows for thinner oils in general.
