The 71 carb will make more power on either engine, not a lot around 5 or 10 if there both carbs are very good.

I have Mike Slabeck at Sherman racing engines 713 477 4430 do what machine work I have done and the flow work, balancing, Dyno work, valve jobs ECT at Shermans/Trumbles Shop I do as much as I can myself.
A Dakota pan that will fit a 340 are very hard to find, but I have machined a 340 rear main cap to a 360 sizes and the 360 Dakota pan will fit then.
I assemble everything myself.

There's not much difference between a Chevy sb and a mopar sb but you have to be careful who's doing the work. There are a few differences.

Jeremy are you a machinists ? So you use the 360 oil pan from the magnum motors ? Any year in particular ?
what type of hone does Mike Slabeck use ? or do you do your own honing ?
