Seriously though, those are supposed to insure that you are not some machine hunting information by scanning for email addresses and phone numbers.
(This is one of the reasons the owner of a website doesn't want people posting their phone numbers or email addresses)
Having to type in what you see as an image proves that an actual person is doing it.
So far machines/computers don't see the text we see as text because it's a picture and not actual text they can read and respond to.
