I just installed the 10.95" "Stage 1" front disc upgrade for my 1967 Dodge Dart 270. When the time comes for new brake pads, what vehicle do I buy them for?

I can't seem to locate this information and any guidance is appreciated!

stock 10.95 as they are using stock calipers...?

stock calipers, almost any pad, 10.9 or 11 7/8 rotor uses the same caliper, pads.

What is a "Stage 1"?

If it is a OEM based system, there are two types of calipers/pads that used 10.98" rotors. In turn, they had different mounting brackets.
One is the E-Body type, which installs with two long pins. The tabs on the pads have a hole in them. Several aftermarket brands of pads include "39" in the part number.
The other type is the kind used on the '73 and newer A-Bodies. This is the slider type, and uses screwed in tabs on the caliper bracket to attach the pads. This pad often has "84" in the part number.
As noted by Pishta, both of these types of calipers/pads/brackets were used on other types of Chryslers. As far as I know however, the slider type was never used on E-Bodies, and the pin type was never used on A-bodies. That could help you when buying pads.

Jeesh ... this is the second bone-headed move I've made in two days. I really need to stop posting these questions when I'm tired. Thanks for being patient with me.

What was missing is - I installed the 10.95" "Stage 1" front disc upgrade from Doctor Diff.

No worries, we've all done that.

Doctor Diff's website says Stage 1 is an OEM based kit, and pictured is a slider style system. So, 1973 or later Dart pads should do the trick.
