So when I hook up the spring to my pedals it torques the whole thing sideways what am I doing wrong

Also when you push the clutch pedal down the force of the spring takes it to the floor... what brings it back up to the top?

The spring is an "over-center" spring. Applying the clutch- as you press the pedal down and pass the "over-center" point, the spring is now assisting your effort in applying the clutch- it is pushing down. Releasing the clutch- the pressure plate springs push the linkage and pedal back up to that "over center" point where that spring is now aiding the return of the pedal to its stop position. This may seem complicated but is designed to work with a Borg and Beck clutch. If you install a diaphragm clutch, then you remove the "over center" spring.

Ok thanks for the info...Im buying a kit from American Powertrain and all it says is:

HIGH CLAMP LOAD LOW FLEX FORMED PRESSURE PLATE,

26-SPLINE FULL FACE WOVEN KEVLAR SPRUNG HUB DISC

Im not sure what style plate that is...

Look at it. If it has 3 fingers it is likely Borg and Beck, "a whole bunch" of compression springs around the pressure plate. Those have fairly high release force, is what the cars originally were equipped. Many aftermarket are "diaphragm" clutches. These have many fingers close together and generally require less release force. With this type, normally leave the over-center spring out.
