Got pre-approval today to build a new 26' x 36' garage and looking for interior ideas and figured I would ask for suggestions and photos of what you have done. Its a frame construction with vinyl exterior, concrete floor with a 6/12 pitch roof. Have to work out some items with the builder such as door sizes, location of a man door and such.

Spray insulate the building, at least the roof.
You can not believe the difference it makes in your effort to heat/cool $ the building.
It also adds sound proofing and adds value to your investment.
If you plan on doing a car lift consider a coffer ceiling.
I have 10 foot walls in my shop and I have a 4 post lift that I can park may Tundra under while my Barracuda is on top. Coffer ceiling made the clearance height just over 13 feet.
