Dang, no tri tips around here. The guys reverse sear them on the smoker all the time on the internet. All I can do is drool. Lol

Hardwood fire, smokey is better, low temp I put the screen where I can hold my hand just over it for a 10 count, season it and let it sit before it goes on the fire. I want to try grape wood in the fire. We use our version of red oak most time. Almond worked well as did apple. Mesquite works real well, but the locals have to have their oak :lol:. I'll have to watch the vineyards when they do their vine turnarounds.
