Which gear set to use with my combo

Here's the facts and let me know what ya think while you're recuperating from Thanksgiving meal. This is for my 64 D100 440/727. I'm going to rebuild one with a powr-lok. I'm looking the right gear for this combo, somewhere in the middle. This truck will see some road trips but, mostly local and I don't care about racing. I don't want to be a dog with the 727 either. I know some of you folks are good at calculating this sort of stuff. I have a 3.23, 2.94, 2.76 and all are 741s. I'm not using the 3.91s because it seems too high RPM on the Hwy. No I don't have a tach. Truck is a flying brick weighing 3400ibs. Any of the 3 gear sets will work by my calculations.
76-440 Never been on the dyno and I didn't rebuild it. Truck engine. Internals?

Edelbrock 2192 Performer Plus cam
Duration at .006" Lift: Intake 270° Exhaust 280° Duration at .050" Lift: Intake 204° Exhaust 214° Lift at cam: Intake .280" Exhaust .295" Lift at valve: Intake .420" Exhaust .442" Timing at .050 Lift: Open Close Intake 5° ATDC 29° ABDC Exhaust 44° BBDC 10° BTDC Centerlines: Lobe Separation - 112° Intake Centerline - 107°
