Head gasket Recommendations

70aarcuda, Its a 360 bored .030 and stroked to a 408. The compression with the steel heads is 10.5:1. The cam is a comp cam solid roller with a .575 lift on both valves. The edelbrock heads have the oversized 2.02 and 1.90 I think. the intake will be the old TR5 with the lower upper plantum and the carbs will be the holley 600 performance. Running TTI headers with 3" exhaust. Automatic trans and 4000 converter.

OP, no one can give you solid advice without:
We can work from the 10.5 static CR, but that tends to have some degrees of assumption in it. Your big potential problem is not the head gasket, but that fact that if you are changing from standard LA360 open-chamber iron heads to Edelbrock closed chamber heads, your static CR will jump up around a full point, maybe a bit more. If the cam is too small for that, then you will run into possible detonation with certain fuels (like pump premium).

So can we back up first and get those questions answered?

And, is this engine/car exclusively for drag racing, or for what use?
