The shim is not only subjected to high temps but also to the exhaust pressure pulses. .002” copper will not withstand the pulses. I use .015-.020” S/S shim stock.
It'll be fine, with the solid gasket in between and a copper piece earthier side free flowing exhaust, the pulses you describe will pull the other way with the flow of exhaust.
