Alignment shop - chain store or Mom & Pop?

I read the 'Turn of the screw' articleand have printed out the 'skosh' chart.
I have a good alignment tech who has done my '37 Pontiac with original '74 MII front clip.
My Pontiac has quick steering2.5 turns lock to lock, and is similar in reastion to my'15 F150.
In comparison this Valiant feels like I'n turning a ships wheel!
Now I'm not looking for auto-x response but I owuld like it a bit tighter as a driver/cruiser.
Someone added the KH disc setup with what appears to be stock components.
Which setting on the 'skosh' chart would you recommend, given the limitations of the stock arms?
