A procedural change at the local hard boiled egg factory

salt water brine....? Wife says to put them in cold water for 10 minutes after you boil them. It stops the cooking (when they are done) and is supposed to pull the albumen away from the shell making it easier to peel. I never had an issue peeling boiled eggs, but I hear 'older' eggs are harder to peel for some reason. Fun fact: raw eggs can hold for weeks in the fridge. If you think they are bad, put them in a cup of water. If they float, toss 'em.
