A procedural change at the local hard boiled egg factory

I eat lots of eggs, and boil them up a doz at a time. But sometimes they just won't peel decently, and I fix them all the same, all the time.

So for the next several batches, I'm gonna try a bit different

Tonight, one egg in the batch was badly cracked after boiling. So I fished it out and peeled it, and it occurred........and I've noticed this previously

Eggs seem to peel a lot faster/ easier when "right out of the pot." So I just peeled the whole darn dozen and threw them into a couple of sandwich bags

Thoughts, comments, jeers?
 
Sandwich bags? Thow them in a mason jar full of Vinegar! Maybe a pinch of tabasco....mmm. Put a dash pf salt in the boiling water, it'll soften the shells slightly, not enough to make them taste salty.
 
Well............................last time I boiled my eggs I got third degree burns and my wife was really pissed!!!:rofl::poke::soapbox:

I've tried salt, "lots" doesn't seem to help much. Sorry, buddy I don't care for vinegar or tabasco. Just salt and pepper is all I need.

salt water brine....? Wife says to put them in cold water for 10 minutes after you boil them. It stops the cooking (when they are done) and is supposed to pull the albumen away from the shell making it easier to peel. I never had an issue peeling boiled eggs, but I hear 'older' eggs are harder to peel for some reason. Fun fact: raw eggs can hold for weeks in the fridge. If you think they are bad, put them in a cup of water. If they float, toss 'em.

no egg salad sandwich?! :realcrazy: i put them in ice water for ~20 min. around 2 out of 10 are hard to peel so i have no idea what makes them better or worse
 
after i boil mine, i run cold water on them while still in the pan. after that i put a couple cups of ice on them and leave them in pan until ice melts. no problem peeling them now.

Probably a good thing you don't have a cat. You'd kill it.

That's exactly what I do, but every so often..............

The last batch before tonight maybe 4 or 5 out of the 12 were a ***** to peel. I didn't treat them any different than the others.

If this continues to work well I'll stay with it. These peel in about 1/4 the time that cold eggs do. I cooled them off in water but they are still a bit warm to the touch.

You bet. I cut way back on eggs, many years ago, when my Gramps and Dad were both fighting cholesterol. This of course was a misguided decision, prompted by the media nonsense over "things that are bad for you." Turns out to this day I don't suffer from high cholesterol.

I eat scrambled ones nowadays. One favorite "easy breakfast" is to take previously cooked loose ground beef and throw it and a couple eggs in and stir it up into sort of a hash. I don't use much seasoning in anything, a LITTLE salt and a fair amount of black pepper
 
Try salsa in with the scrambled eggs...yummy. Melted cheese on them too....

YUMMY. Nothing like several pickled hard boiled eggs washed down with a few beers. After a while, that combination produces a non-fragrant event loved by all.

I can lose my self-control around some good deviled eggs...
My wife makes awesome deviled eggs. they go great with burgers and Brats at a BBQ.
 
Forgot I was cooking and boiled the eggs for 30 minutes and they peeled super easy. Straight into cold water and peel as soon as they won't burn you. Seems the expensive eggs are harder to peel
 
Had a fella named Al who worked for me a few years back.
Every day he'd eat 2 hard boiled eggs at breakfast, and at least two more at lunch time.
Claimed that was the only thing his wife could cook.
Al usually ended up working by himself.
Maybe Al was on to something.
 
We dont hard boil eggs but hard cook them. Bring to a good boil for a couple minutes, remove from heat, cover and let stand for 15 mins. Yoke doesn't overcook or turn grayish. Wife figured out running cold water over them until they are cold makes them a biotch to peel. Pour off hot water, add cold water if you want, peel soon as they are cool enough to handle.

The only thing I'm not crazy about with eggs is egg salad. Other than that, get outta my way.
