A procedural change at the local hard boiled egg factory

Roll the egg in your hands until it's all cracked then start pealing from the large end and get under the protective layer. To cook I put the eggs in the pan/water bring to a boil for one minute then remove from heat and let rest for 8-10 minutes(I go less for softer) then the cold water at trickle just to keep the eggs cool. Work great for pealing most of the time. Paprika on deviled eggs or even smoked paprika tastes great.

I have 12 pullets at 14 weeks, out if the six old the six old hens two are still laying regular(5 yrs old) can't wait for this next group to start. Nothing beats fresh eggs on the weekend for breakfast(except a fork maybe). My Mama said the yokes were Perky cause they stood up so high.
