Summit has some nice looking seats, under their own name ( a leather look) and also Procar (vinyl or velour) in colors other than black.
I'm prejudiced, but with the temps in southern california and Arizona, I'm not EVER gonna do an interior in black, vinyl or leather, again.
And if you go with a lowback, you will have to have a headrest welded to the cage.
