What size carburetor should I be using LA 360 engine?

What size carburetor should I be using on my LA 360 engine? Right now I have a 670 Holley carburetor. It has a mild cam. The mechanic says the 670 carburetor is too small on my LA 360 engine. And it’s not getting enough gas in the engine. He said I need a 750 carburetor. Right now the car stalls out when I put it in gear.

Your mechanic might be a neanderthal but what he's probably meaning is that ..that carburetor is an "economy performance" carburetor and he's right if that's what he's trying to tell you , and it won't work very well with some camshaft. You'll have lean spots usually in the mid-range with those carburetors....not dying in gear, that is due to his lack of 'tune ability'.

If he is older... he might think it needs the primaries drilled... to stay at the lower stock'ish initial timing.

In other words...he's not thinking "curve the distributor"...
 
Quick and easy;
Assuming the fuel is fresh, the fuel level in the bowl is correct and stable, the secondaries are closed up tight, the PCV is correctly plumbed, and the Distributor advance springs are both in there and working;
Defeat the Vacuum advance.
Reset the Idle-Timing to 8*,
set the mixture screws to 1 turn,
and idle it up until it quits stalling when going into gear.
There's a start.

I have a 360 in my 68 Dart with a Holley 750 on it and for a while I had the same "issue" as you with the car running great in Park, then wanting to die the second I put it in gear. What I ended up doing was buying an engine analyzer off CL ($10) and finding an old timing light ($10) and just started turning things. In the end my timing was WAY off, and my floats were also WAY off. I am by no means an expert and I am still learning but I've gotten to the point where I can get it idling good now. If I had to say anything about the carb size, I would say that if anything, it might be too big for normal day to day driving but then again, my biggest assumption now with the car is that if something isnt running right, then I haven't adjusted something correctly
