I wanted to try and at least get some decent gas mileage, so I'm going with a 318 with 302 heads. But then I can't resist a little wow factor when you open the hood, so I'll top it off with an Edelbrock D-66 with a pair of 500 AFBs set up progressively. Also looking at a Silver Sport A-41 overdrive 4 speed, but they sure are pricey...
