I came across an engine builder on-line out of Florida that does driveway break-ins on a stand without a radiator or water pump; cools with once through garden hose water. That got my thinking, and I'm going to try it, but I don't want to put new good engine on it in case there is much of a learning curve with the cooling etc.

I don't like that. The water going in is VERY cold and that's not good, especially for break in. As cheap as radiators are, I would get one for like a Chevy truck and run with it. And yes, that's a VERY old school grind, but it's a dang good one. You could actually go racing with it. It's just decent enough for that and would be extremely reliable, because of the low lift and single spring requirement. There's a lot to be said for old school technology. Even today.
