I like smooth on the exhaust side. On the intake side, texture helps the air/fuel atomize. You don't want "burrs" or "flash" on the intake side, but "grind stone" texture is ok.

Actually, you WANT a burr finish IF you can get it right. It’s not easy, and you can’t always copy how someone else does it.
