My great uncle in Abilene, KS used to own the Broadway Market many moons ago. They specialized in meats and cheeses. One of their specialties was scrapple. They had one customer who liked their scrapple so much he had them ship him some overseas during WW II. Being in Abilene you can guess who it was. Yep, Gen. Eisenhower.
I always heard scrapple came from the Pennsyvania Dutch.
And Spam and souse (head cheese) are totally different. I love all three. I love a good hot head cheese with a slice of Muenster, and brown spicy mustard on pumpernickel or rye.
