How to interact with a police officer(s)

That is the plight of being a police officer. When a cop makes a mistake it can be devastating. Training will kick in and muscle memory will take over as well and you rely on it to survive, but they are still human and things happen. The radio tells you the guy you have stopped has vehicle issues and a warrant for illegal possession of a weapon. Officers know people who possess illegal weapons usually have one on them. Stress begins there and then he fights and tries to get back into the one place you sure don't want him, in the car where a weapon may be! Stress gets higher and like anyone some handle it better than others and you decide you need to go less lethal. With stress you are now in fight or flight, your body will take the blood and move it to where it's most needed, your heart and organs and that makes yours fingertips and extremities lose feeling to a degree. Now with a loss of the sensitive recognition you grab the wrong weapon and a mistake is made. Until you have been in these situations in the military or police or whatever and after being in a somewhat calm state to someone trying to murder you or threaten you to that degree, it's hard to judge.
