Stop in for a cup of coffee

Wow I butchered them a bit but made 24 pieces. For the brine I used brown sugar, fresh squeezed orange, onion and garlic powder, soy sauce, salt, tabasco. Supposed to brine 8-12 hours but may do overnight and wife can tend the smoker while I'm at work tomorrow. Using alder and finishing with apple chips.

Best smoked Salmon I ever et, smoked by someone else or myself was smoked with apple wood. Got the brine recipe scribbled down round here somewhere. Like eatin' candy on a cracker :D.
