I’m about to attempt to paint my 68 GtS, I’m not a novice when it comes to painting always painted sections of cars, but never a complete, my question is what order of the body should I start with and end with, do I run down the sides of the car or the roof, etc
 
I suggest you start at the top and work your way down. Multiple reasons. Overspay settles so let gravity do its thing. Also if you paint sides first you take a chance of you or the air hose bumping the freshly painted sides
 
That guy from eastwood (Kevin Tetz) does a nice series and covers his method wiith good explanations as to why. One thing he emphasizes his he does hoods differently than a lot of people. He starts at one side and goes alway the way across instead of starting at the middle, then doing the other side. His reasoning is pretty simple in that you can end up with a "thicker" paint line down the center of the hood.

He's worth watching.

 
That Eastwood video series is what have me confidence to paint the car myself. He goes into air compressor specs, dryers diy dryers, etc. It really is a great series.
 
Depends on what kind of booth you're in. Downdraft you start bottom up. I've always painted hoods from one side the the other. Most people start in the center and then the fender and by the time they get to the hood again you may have issues keeping it wet.

Not going to be using a booth. I will be spraying in my friends shop garage
