Looking to buy/build 500-600 fwhp 360

I need some advice on camshaft and cylinder head selection. First of all, I'm needing to stay on pump gas. I am at 3200 feet and the premium here is 91 octane, and non-ethanol fuel is easy to obtain. Now for the problem. I just bought a stoker kit for the 360 to 408. This piston gives me 10.7:1 with 65 cc combustion chambers. BTW, I went with a Scat cast crank because the engine builder thinks they are good to about 600 hp. Yes, I would have preferred a forged crank, but try finding parts right now. Pistons and rods are forged.
I realized that compression ratio is dependent on cam shaft to a degree. I'm looking for 500 hp without nitrous and 600 with nitrous. I'd like to go with trick flow heads but can't find any and they are 60 cc combustion chambers. Maybe looking at Edelbrock heads, which I believe are 65 cc. I think my compression ratio should be under 10.5 to one. How much compression can I get away with at this elevation with derated 91 octane premium? What is the easiest way to lower compression a little bit? Not happy with my options, but I am going to have to live with them with the supply chain shortage. I was lucky to get the stroker rotating assembly....
And, I need to pick a carb and intake manifold.


You can run 11:1 on that gas without issue IF you do it right. RustyRatRod has outlined how to do it right in a /6 thread. I think that’s where I read it.
