Assuming you have the correct mounts made correctly, the mounts cam (or should be able to) slide up and down within the K frame and adjust the engine tilt from there. There are also shims you can purchase or make yourself to help level the engine out.
Yes, the brackets are slotted to allow for some movement. Both of the brackets are at the end of the slots. Maybe I can increase the slot length to allow for some more adjustment.
