Steel wheels on a 69 Dart

I want to put disc brakes in my 69 dart and go to a 15 inch steel wheel with dog dish hubcaps. Looking at the wheels from Classic industries. 7 inch or 8 inch or both?
What size tires?

All input appreciated.
 
The most that I could fit on my 69 Dart, was rears 15x7 with a 4.25 backspace. I used Wheel Vintiques wheels.
