I think the book "How to Make Your Car Handle" by Fred H Puhn, had a list of ride heights related to ground clearance. Generally the factory stance was level. New springs will settle a bit over the first 1,000 miles or so. Going to a 1" larger diameter wheel on the back with the tire width and aspect ratio the same will raise the back about 1/2".
