Agree, tough to maintain cooking temp even with warmer temps but with wind. I have a big Webber charcoal grill that has two wood chunk pans that go on the outside for a "cool zone" in the middle but so much work to regulate temp and that's the key as you know.
That is where the pit boss and traegars shine, they hold temp. Makes all the difference in the world. We wore a pit boss out, we replaced part after part till the thing was just plain shot. We did not buy another one until we found the traegar on sale at a price we could not say no to. they are great smokers as well.
