It's Time to Eat!

I did some ribs on my Traeger Pellet grill today. I have been working on ribs for many years now, and I think I have perfected them. 3 Hours on the lowest setting (Smoke setting - about 170 degrees), Then I wrap them in aluminum foil after adding melted butter, brown sugar, a drizzle of honey and some BBQ sauce to both sides. They get about 1.5 to 2 hours at 225 degrees. I take them off when the meat probe (stuck through the foil) reads 205. When you open the foil, there is a lot of juice in there. I pour it carefully into a pan. It is liquid gold. I brush a little BBQ sauce on the ribs and put them on the smoker at 250 for about 15 minutes to tighten up the sauce. Meanwhile, I simmer the liquid that came off the ribs until it is just a little thinner that BBQ sauce. I cool it down while the Ribs rest for about 20 minutes. Then I add a little more BBQ sauce to the cooled liquid. It is the best sauce I have EVER had on ribs. Everybody likes it.
