I'm gonna go against the grain here and say the Edelbrock carb has issues that can't easily be resolved. They have a very pesky off idle lean condition that causes hesitation and really can't be dialed out without having a very rich idle mixture setting.
And trust me, I'm well aware of the changes you can make with the carb. I've tuned several.
I'm not familiar enough with the quadrajet but from what I understand it's a more sophisticated carburetor with more tuning flexibility. Key word though I'm not that familiar.
