Engine is pulled - 273 rebuild or replacement 360 crate?

So we’ve been buying parts to build the 318 into a stroker using a Mancini Racing crank with a 3.58 stroke. The cam is a Comp grind 279TH7 279/296 duration with .468/.473 lift. LSA is 107.

Question: we’ve ordered an AVS 2 650 CFM. Is this enough carb? We are now second guessing that decision and think maybe the next size up would be better, I think that’s 800.
