Well @kiwigtx ....When butchering the pig there is a pot that you throw the bones with meat on and other parts in and you boil it down. These guys refuse to try it because they think there is wierd stuff in it. When it is cooked down (like chicken stock) you take the juice and add cornmeal with salt and pepper and you have the Scrapple witch is nothing more thatg the juice with cornmeal. But the meat left over is run tgru the grinder and it looks like oatmeal. But it is pure meat and very tasty.
Sounds a little like what the Brit's call "Black Pudding" - basically boiled down pigs' blood and other squeezing's plus any leftover meat/sinew that was pressure washed off the bones.
